Pure comfort in every spoonful, this Creamy Potato and Cheese Soup comes together in less than 45 minutes and is perfect for lunch or dinner.
INGREDIENTS:
- 4 Large Potatoes, peeled and diced
- 4 cups Chicken or Vegetable Broth
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 Tablespoons Butter
- 1 cup Heavy Cream
- 2 cups Shredded Cheddar Cheese, shredded
- Salt and Pepper, to taste
- Garnish: Chopped chives, green onions and bacon bits
Step 1
In a large pot, melt the butter over medium heat, melt the butter over medium heat. Add the diced onion and garlic, and sauté until the onion is soft and translucent.
Step 2
Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce. theheat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
Step 3
Using a potato masher or immersion blender, mash or blend the potatoes until the soup reaches your desired consistency.
Step 4
Stir in the heavy cream and shredded cheddar cheese, and continue to cook the soup over low heat until the cheese is melted and the soup is creamy.
Step 5
Season the soup with salt and pepper to taste, and adjust the consistency with more cream or broth if desired.
Step 6
Ladle the creamy potato and cheese soup into bowls, and garnsih with chopped chives or green ions, and bacon bits.
