Kale and Sweet Potato Quinoa Bowl

About this Recipe

Healthy and delicious, this Sweet Potato and Kale Quinoa Bowl recipe is made with fresh, whole grain ingredients and lots of fiber to give you the energy you need for your day!

INGREDIENTS:

  • 2 cups Quinoa
  • 4 cups Vegetable Broth
  • 2 large Sweet Potatoes, peeled and cubed
  • 1 bunch Kale, stems removed and chopped
  • 1 Red Onion, finely chopped
  • 4 cloves Garlic, minced
  • 1/4 cup Extra Virgin Olive Oil
  • 2 teaspoons Paprika
  • 1 teaspoon Cumin
  • Salt and Pepper, to taste
  • 1/4 cup Toasted Pumpkin Seeds (opitonal, for garnish)

Step 1

Rinse the quinoa under cold water and drain.  In a medium-sized pot, bring the vegetable bowl in indiviudal serving bowls, topped with a sprinkle of toasted pumpkin seeds for added crunch and presentation.

Step 2

While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped red onion and cook until translucent, then add the minced garlic and cook for an additional minute.

Step 3

Add the cubed sweet potatoes to the skillet and cook for 10-12 minutes, or until tender and lightly browned.  Season with paprika, cumin, salt, and pepper.

Step 4

Add the chopped kale to the skillet and cook for 3-5 minutes, stirring occasionally, until the kale is wilted.

Step 5

To serve, spoon the cooked quinoa into serving bowls and top with the sweet potato and kale mixture.  Garnish with toasted pumpkin seeds, if desired.
