INGREDIENTS:
PASTRY CREAM:
- 2 cups Whole Milk
- 1/4 cup Cornstarch
- 2 cups Fresh Strawberries, hulled
- 1/4 cup Strawberry Jelly or Jam
- 2 Egg Yolks
- 1 teaspoon Pure Vanilla Extract
- 1/2 cup Granulated Sugar
- Powdered Sugar, for dusting
TART SHELL:
- 1 1/2 cups All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1/2 cup Unsalted Butter, cold and cubed
- 1/4 teaspoon Salt
- 1 large Egg Yolk
- 1/2 teaspoon Pure Vanilla Extract
Step 1
Preheat oven to 375ºF (190ºC).
Step 2
In a food processor, mix the flour, cold butter, vanilla and sugar until the mixture resembles coarse crumbs. Add one egg yolk and continue mixing until the dough comes together.
Step 3
Press the dough into a tart pan, covering. thebottom and sides. Prick the bottom with a fork and bake for 15-20 minutes until golden brown. Let it cool completely.
Step 4
In a saucepan, heat the milk until simmering. In a bowl, whisk together sugar, cornstarch, salt, and egg yolks until smooth. Gradually pour the hot milk into the egg mixture while whisking. Return the mixture to the suacepan and cook until thickened, stirring constantly.
Step 5
Remove the pastry cream from heat and stir in the vanilla extract. Allow it to cool slightly and then pour it into the baked tart shell.
Step 6
Arrange whole strawberries on top of the pastry cream in a circular decorative pattern.
STEP 7
In a small saucepan, heat the strawberry jelly over low heat until melted. Brush the melted jelly over the strawberries for a glossy finish.
STEP 8
Chill the tart in the refrigerator for at least 1 hour, recommened 2, before serving. Enjoy!
