This Kale Quinoa Salad with Lemon Honey Dressing is the perfect nutrient-packed salad that combines the earthy flavors of kale and quinoa with the sweetness of cranberries and crunch of almonds.

A perfect balance of flavors and textures in every bite, this salad is a great option for a healthy and satisfying meal.

INGREDIENTS:

SALAD
  • 1 cup Dried Quinoa
  • 4 cups Chopped Kale
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Almonds

 

LEMON HONEY DRESSING
  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Balsamic White Vinegar
  • 1 Large Garlic Clove, minced
  • 4 Tablespoons Lemon Juice
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Honey
  • Salt and Pepper, to taste

Step 1

Rinse the quinoa in a fine mesh strainer and cook according to package instructions.  Once cooked, fluff with a fork and let it cool.

Step 2

In a large mixing bowl, combine the chopped kale, dried cranberries, and chopped almonds.

Step 3

In a small bowl, whisk together the olive oil, balsamic white vinegar, minced garlic, lemon juice, dijon mustard, honey, salt, and pepper to make the dressing.

Step 4

Pour the dressing over the kale mixture and toss to coat evenly.

Step 5

Add the cooled quinoa to the bowl and gently fold it into the kale mixture.

Step 6

Taste and adjust seasoning, if needed.

Step 7

Serve the quinoa kale salad immediately, or refrigerate for a couple of hours to let the flavors meld together before serving. Enjoy!
