Combing the classic fall flavors of maple and rosemary, this simple Maple Glazed Roasted Chicken with Herb Potatoes dish will have your family asking for more.

  • 1 Mary’s Organic Whole Chicken (about 4-5 pounds)
  • 1/2 cup Maple Syrup
  • 3 Tablespoon Dijon Mustard
  • 3 Tablespoon Soy Sauce
  • 1 Tablespoon Freshly Squeezed Lemon Juice
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

For the Herbed Potatoes:

  • 1 1/2 pounds Baby Potatoes
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Chopped Fresh Parsley
  • 1 Tablespoon Chopped Fresh Rosemary
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Step 1

Preheat oven to 400ºF (200ºC).

Step 2

In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, lemon juice, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Set aside.

Rinse the chicken thoroughly and pat dry with paper towels.

Place the chicken in a roasting pan, breast side up.

Pour half of the maple glaze mixture over the chicken, ensuring it’s evenly coated.

Place the roasting pan in the preheated oven and roast for about 30 minutes.

Remove the roasting pan from the oven and let the chicken rest for 10 minutes before carving.
