Satisfy your sweet tooth with these fluffy Lemon Blueberry donuts that are bursting with fresh blueberries and topped with a zesty lemon glaze.

Perfect for breakfast or a sweet treat any time of day!

INGREDIENTS:

DONUTS
  • 1 cup Fresh Organic Blueberries
  • 2 cups All-Purpose Flour
  • 1 cup Powdered Sugar
  • 1/2 cup White Sugar
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Lemon Juice
  • 1/4 cup Oil
  • 1/4 cup White Sugar
  • 1/2 cup Milk

 

LEMON GLAZE
  • 1/4 cup Powdered Sugar
  • 2 Tablespoons Lemon Juice
  • Zest from 1 Lemon

Step 1

Preheat the oven to 350ºF (175ºC) and grease a donut pan.

Step 2

In a large bowl, mix together the flour, powdered sugar, white sugar, baking powder, cinnamon and salt.

Step 3

In another bowl, whisk together the eggs, vanilla extract, lemon juice, oil, and milk.

Step 4

Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.

Step 5

Gently fold in the organic blueberries.

Step 6

Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

Step 7

Bake for 12-15 minutes, or until a toothpick inserted into the donuts comes out clean.

STEP 8

Allow the donuts to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

STEP 9

In a small bowl, mix together 1/4 cup powdered sugar, 2 tbsp. lemon juice and lemon zest to create the glaze.

STEP 10

Dip cooled donuts into glaze and let set before serving.
