About this Recipe

So yummy and simple to make, these Bacon, Egg and Cheddar breakfast sandwiches are the perfect meal to start your day! Prepared with crispy bacon, fried eggs, cheddar cheese, served on on a Sesame Seed bagel or English muffin!

INGREDIENTS:

  • 8 slices Applewood Bacon
  • 4 large Brown Eggs
  • 4 teaspoons Butter, divided
  • 4 Sesame Seed Bagels or English Muffins, split and toasted
  • 4 slices Cheddar Cheese
  • 4 slices Green, Leafy Lettuce
  • Salt and Pepper, to taste

Step 1

In a large skillet over medium heat, cook the bacon until evenly brown, about 7 minutes, then transfer it to a paper towel-lined plate to drain excess grease.

Step 2

Remove most of the bacon grease from the skillet, leaving about 1 tablespoon for cooking the eggs.

Step 3

Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper.

Step 4

While the eggs are cooking, coat each bottom of bagel or English muffin with a 1 teaspoon of butter, then place a slice of lettuce, cheddar cheese and 2 slices of bacon on top.

Step 5

Once the eggs are cooked, carefully place them on top of the lettuce, cheese, and bacon.

Step 6

Place the top half of the bagel or English muffin on each sandwich, and gently press down to allow the cheese to melt slightly. Serve immediately.

SERVING SUGGESTIONS:

Enjoy with a side of fresh fruit or a small salad.
