Quick to make, this Pork Medallions in a Creamy Mushroom sauce recipe is easy to make for weeknights and elegant enough for a special occasion.
INGREDIENTS:
- 1 lb. Pork Medallions, sliced 1-inch thick
- 1 cup Fresh White Mushrooms, finely chopped
- 1/2 cup White Wine
- 1/2 cup Chicken Broth
- 1/4 cup Heavy Cream
- 2 cloves Garlic, minced
- 2 Tablespoons Extra Virgin Olive Oil, divided
- 2 Tablespoons Butter
- 1 teaspoon Dried Thyme
- Salt and Pepper, to taste
Step 1
Preheat the oven to 375ºF (190ºC).
Step 2
In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped mushrooms and garlic until the mushrooms are soft and the liquid has evaporated. Season with salt and pepper. Remove from heat and let it cool slightly.
Step 3
In the same skillet, heat the remaining olive oil over medium-high heat. Sear the pork medallions until golden brown on both sides, about 2-3 minutes per side.
Step 4
Transfer the pork medallions to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145ºF (63ºC).
Step 5
In the same skillet used for searing the pork, add the white wine and chicken broth. Bring to a simmer and let it reduce by half. Stir in the heavy cream, butter, and dried thyme. Simmer for a few more minutes until the sauce thickens.
Step 6
Season the white wine sauce with salt and pepper to taste.
Step 7
Serve the pork medallions in the creamy white wine sauce over a bed of creamy mashed potatoes or alongside a mixed green salad and enjoy!
