About this Recipe
The perfect healthy breakfast or snack on the go, these Strawberry Oat Breakfast Bars are easy to make and made with fresh strawberries.
INGREDIENTS:
- 2 cups Old-Fashioned Rolled Oats
- 2 cups Fresh Strawberries, diced small
- 1 cup Gluten-Free Flour
- 1/2 cup Brown Sugar
- 1/2 cup Unsalted Butter, melted
- 2 Tablespoons Cornstarch
- 2 Tablespoons Lemon Juice
- 1/4 cup Granulated Sugar
- 1/4 teaspoon Salt
Step 1
Preheat oven to 350ºF (175ºC) and line a 9×9 inch baking pan with parchment paper.
Step 2
In a mixing bowl, combine the rolled oats, gluten-free flour, salt and brown sugar.
Step 3
Pour the melted butter over the oat mixture and stir until well combined and the dry ingredients are evenly moistured and forming clumbs.
Step 4
Press two-thirds of the oat mixture into the bottom of the prepared baking pan to form the crust.
Step 5
In a separate bowl, mix the diced strawberries, cornstarch, lemon juice, and granulated sugar until the strawberries are coated evenly.
Step 6
Spread the strawberry mixture over the oat crust in the baking pan.
Step 7
Sprinkle the remaining oat mixture evenly over the top of the strawberries.
STEP 8
Bake for 35-40 minutes or until the top is golden brown and the strawberries are bubbling.
STEP 9
Allow the bars to cool completely in the pan before cutting into squares or bars.
NOTE
Store any leftovers in an airtight container at room temperature for up to 3 days.
