Enjoy a taste of the tropics any time of the year with these Hawaiian-Inspired Pineapple and Chicken skewers.  Packed with flavor while delivering the perfect blend of sweet and savory, these tender skewers are the perfect dish that will have your family asking for more. 

INGREDIENTS:

  • 1 1/2 pounds Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
  • 1 Fresh Pineapple, cut into chunks
  • 1/4 cup Soy Sauce
  • 2 Tablespoon Honey
  • 2 Tablespoons Lime Juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Cilantro, chopped
  • Wooden Skewers, soaked in water for 30 minutes
  • Garnish: Grilled Lemon Slices

Step 1

In a bowl, combine soy sauce, honey, lime juice, minced garlic, ground ginger, black pepper, and chopped cilantro to make the marinade.

Step 2

Place the chicken cubes in a large gallon-size resealable plastic bag and pour in the marinade. Seal the bag and shake to coast the chicken evenly. Marinate in the refrigerator for at least 30 minutes.

Step 3

Preheat the grill to medium-high heat.  If baking, preheat oven to 450º and line a baking sheet with aluminum foil.

Step 4

Thread the marinated chicken and pineapple chunks alternately onto the soaked skewers.

Step 5

Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the pineapple is caramelized.  If baking, lay the skewers on a baking sheet leaving a little space between each one and bake for 25 minutes or until cooked throughly, turning half way through.

Step 6

Remove the skewers from the grill and let them rest for a few minutes.

Step 6

Serve the skewers on a platter, garnished with additional chopped cilanro, and grilled lemon slices.  Enjoy!

SERVING SUGGESTIONS:

Serve teh skewers on a bed of fluffy white rice with a mixed green salad.
