INGREDIENTS:
- 1 cup Dried Lentils (green or brown), rinsed and drained
- 1 – 12oz. package First Light Farms® Wagyu Beef Meatballs
- 1 Tablespoon Extra-Virgin Olive Oil
- 1 medium Yellow Onion, diced
- 3 cloves Garlic, minced
- 2 medium Carrots, diced
- 2 Celery Stalks, diced
- 1 (14oz.) can Diced Tomatoes (with juices)
- 6 cups Vegetable or Beef Broth
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Red Pepper Flakes (adjust to taste)
- Salt and Pepper, to taste
- 1/4 cup Fresh Parsley, chopped (plus extra for garnish)
- Juice of 1 Lemon (optional, for added brightness)
Step 1
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.
Step 2
Stir in the ground cumin, smoked paprika, red pepper flakes, salt, and pepper. Add the rinsed lentils and diced tomatoes (with their juices), mixing well to combine.
Step 3
Add the vegetable or beef broth to the pot, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 25-30 minutes, or until the lentils are tender.
Step 4
While the soup simmers, in a separate skillet, cook the meatballs according to the package instructions until they’re heated through and browned on the outside.
Step 5
Once the lentils are tender, add the cooked meatballs to the soup. Stir in the chopped parsley and lemon juice for a fresh flavor. Taste and adjust seasonings as needed.
Step 6
Ladle the soup into bowls, garnishing with additional fresh parsley.
SERVINGS NOTES:
