Warm up with a hearty bowl of this Spicy Lentil Meatball Soup, featuring tender lentils and beefy meatballs enriched with a blend of spices. Fresh parsley adds brightness, while aromatic vegetables create a comforting base.

This soup is perfect for chilly days and is sure to satisfy your cravings.

INGREDIENTS:

  • 1 cup Dried Lentils (green or brown), rinsed and drained
  • 1 – 12oz. package First Light Farms® Wagyu Beef Meatballs
  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 medium Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 Celery Stalks, diced
  • 1 (14oz.) can Diced Tomatoes (with juices)
  • 6 cups Vegetable or Beef Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Red Pepper Flakes (adjust to taste)
  • Salt and Pepper, to taste
  • 1/4 cup Fresh Parsley, chopped (plus extra for garnish)
  • Juice of 1 Lemon (optional, for added brightness)

Step 1

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 2

Stir in the ground cumin, smoked paprika, red pepper flakes, salt, and pepper. Add the rinsed lentils and diced tomatoes (with their juices), mixing well to combine.

Step 3

Add the vegetable or beef broth to the pot, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Let it cook for about 25-30 minutes, or until the lentils are tender.

Step 4

While the soup simmers, in a separate skillet, cook the meatballs according to the package instructions until they’re heated through and browned on the outside.

Step 5

Once the lentils are tender, add the cooked meatballs to the soup. Stir in the chopped parsley and lemon juice for a fresh flavor. Taste and adjust seasonings as needed.

Step 6

Ladle the soup into bowls, garnishing with additional fresh parsley. 

SERVINGS NOTES:

Serve with crusty bread or enjoy on its own.
