Warm up with a comforting bowl of this hearty and flavorful sausage, potato, and kale soup. Bursting with ground Italian sausage, tender potatoes, and nutrient-packed kale, this soup is the perfect combination of savory and satisfying. It’s a one-pot wonder that will keep you coming back for more!

INGREDIENTS:

  • 1 pound Ground Italian sausage (mild or hot)
  • 4 cups Yukon Gold Potatoes, peeled and diced
  • 2 cups Kale, finely chopped
  • 1 onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Low Sodium Chicken Broth
  • 1 cup Whole Milk
  • 2 Tablespoons Extra Virgin Olive Oil
  •  1 teaspoon Dried Thyme
  • 1/2 teaspoon Red Chili Flakes
  • Salt and Pepper, to taste

Step 1

Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for about 10 minutes or until translucent and fragrant.

Step 2

In the same pot, add ground Italian sausage and cook until browned. Drain any excess grease.

Step 3

Add the chicken broth, a little at a time.  Then add the potatoes, dried thyme, red chili flakes, salt, and pepper to the pot. Stir well to combine and cook for 15-20 minutes or until potatoes are tender.

Step 4

Stir in chopped kale and let it wilt for a few minutes. Then, pour in the whole milk and stir to combine.  Simmer for an additional 5 minutes to meld the flavors.

Step 6

Pour in whole milk and stir to combine. Simmer for an additional 5 minutes to meld the flavors. 

Step 7

Adust seasoning with salt and pepper, if needed.

STEP 8

Ladle into bowls and serve hot, garnishing with some fresh thyme, if desired.

SERVING SUGGESTIONS WITH:

Serve with a loaf of French bread or in a sourdough bread bowl.
