Nutritious and moist, these Savory Zucchini Feta Muffins are filled with grated zucchini, feta cheese and a whole lot of deliciousness, making them the perfect savory muffin to enjoy on their own or as a companion to a variety of dishes.
INGREDIENTS:
- 1 1/2 cup Grated Zucchini
- 1 cup Crumbled Feta Cheese
- 2 cups White Whole-Wheat Flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Garlic Powder
- 2 teaspoon Dried Dill
- 2 large Eggs
- 1/2 cup Reduced-Fat Milk
- 1/2 cup Unsalted Butter, melted
- 1 cup Grated Cheddar Cheese
- 1/2 cup Grated Courgette
- 2 Tablespoons Chopped Fresh Parsley
- 2 teaspoons Extra Virgin Olive Oil
Step 1
Preheat the oven to 375ºF (190ºC) and line a 12-cup muffin tin with paper liners or grease the cups with cooking spray.
Step 2
In a large bowl, combine the white whole-wheat flour, baking powder, baking soda and salt.
Step 3
In another bowl, mix melted butter, milk, extra-virgin olive oil and eggs.
Step 4
Stir wet ingredients into dry until just combined.
Step 5
Fold in grated zucchini, crumbled feta, grated Cheddar cheese, grated courgette, parsley, dill, salt and pepper.
Step 6
Spoon batter into muffin tin, filling each cup 3/4 full.
Step 7
Bake for 20-25 minutes until golden on top, and a toothpick inserted into the center comes out clean.
Step 8
Remove the muffins from oven and allow them to cool in he tin for 5 minutes before transferring to a wire rack to cool completely.
