About this Recipe

Experience the savory harmony of earthy mushrooms, sweet caramelized shallots, and the luxurious creaminess of Sierra Nevada Truffle Jack Cheese in this Rustic Mushroom Tart.

Wrapped in flaky puff pastry, this dish is perfect for a cozy dinner or an elegant appetizer, sure to impress your guests with its rich flavors and inviting aroma.

INGREDIENTS:

  • 1 sheet (about 14oz.) of Puff Pastry, thawed according to package directions
  • 2 cups Mixed Mushrooms (shiitake, cremini, and button), sliced
  • 2 Tablespoons Extra-Virgin Olive Oil
  • 2 medium Shallots, thinly sliced
  • 4 ounces Sierra Nevada Truffle Jack Cheese, grated
  • 1 Tablespoon Butter
  • 1/2 teaspoon Dried Thyme
  • 1 clove Garlic, minced
  • Salt and Freshly Ground Pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Fresh Parsley, chopped (for Garnish, optional)

Step 1

Heat olive oil in a large skillet over medium heat. Add shallots and butter and cook, stirring occasionally, until softened and deeply caramelized, about 20-25 minutes. Be patient and don’t rush this step – the sweet, caramelized flavor is key!

Step 2

Stir in thyme, salt, and pepper during the last few minutes of cooking. Remove from skillet and set aside.

Step 3

In the same skillet, add mushrooms and garlic, and cook over medium-high heat, stirring occasionally, until softened and browned, about 8-10 minutes. Season with salt and pepper to taste. Drain any excess liquid.

Step 4

Preheat oven to 400ºF (200ºC). Line a baking sheet with parchment paper. Unfold puff pastry sheet on a lightly floured surface. Gently roll out the pastry to slightly enlarge it, if desired. Transfer the puff pastry to the prepared baking sheet.

Step 5

Score a 1-inch border around the edge of the puff pastry using a sharp knife, being careful not to cut all the way through. This will create a raised crust.

Step 6

Spread the caramelized shallots evenly over the center of the pastry (inside the scored border). Top with the sautéed mushrooms. Sprinkle the grated Truffle Jack cheese over the mushrooms.

Step 7

Brush the pastry border with the beaten egg (egg wash). Bake for 35-40 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

Step 8

Let the tart cool slightly before slicing and serving. Garnish with fresh parsley, if desired. Enjoy this rustic masterpiece!

CHEF’S NOTES

For a deeper truffle flavor, drizzle a little truffle oil over the tart after baking.
