Bursting with flavor and vibrancy, this Roasted Tomato Sensation Sauce is a simple, yet elegant sauce that is perfect for drizzling over pasta, pizza, or grilled vegetables.

The caramelization of the tomatoes enhances their natural sweetness, while fragrant herbs and a touch of garlic add depth, capturing the essence of summer that can be enjoyed year-round.

INGREDIENTS:

  • 2 pints Cocktail Tomatoes, halved
  • 4 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1/4 cup Extra-Virgin Olive Oil
  • 1 Tablespoons Balsamic Vinegar
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • Salt, to taste
  • Freshly Ground Black Pepper, to taste
  • Fresh Basil Leaves, for garnish

Step 1

Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper.

Step 2

Rince the cocktail tomatoes and pat them dry.  In a large mixing bowl, combine the halved cocktail tomatoes, minced garlic, and chopped onion.

Step 3

Drizzle with olive oil and balsamic vinegar, then sprinkle with oregano, basil, salt, and pepper. Toss until evenly coated.

Step 4

Spread the seasoned tomatoes in a single layer on the prepared baking sheet.

Step 5

Roast in the oven for 25-30 minutes, until the tomatoes are caramelized and tender.

Step 6

Remove from the oven and let cool slightly. Transfer to a blender or food processor.

Step 7

Blend until smooth or desired consistency is achieved, adding a splash of water if needed to adjust thickness.

STEP 8

Taste and adjust seasoning as necessary, then transfer the sauce to a serving bowl.

STEP 9

Garnish with fresh basil leaves before serving. Enjoy warm or refrigerate for later use!
