INGREDIENTS:
- 2 pints Cocktail Tomatoes, halved
- 4 cloves Garlic, minced
- 1 medium Onion, chopped
- 1/4 cup Extra-Virgin Olive Oil
- 1 Tablespoons Balsamic Vinegar
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- Salt, to taste
- Freshly Ground Black Pepper, to taste
- Fresh Basil Leaves, for garnish
Step 1
Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
Step 2
Rince the cocktail tomatoes and pat them dry. In a large mixing bowl, combine the halved cocktail tomatoes, minced garlic, and chopped onion.

Drizzle with olive oil and balsamic vinegar, then sprinkle with oregano, basil, salt, and pepper. Toss until evenly coated.

Spread the seasoned tomatoes in a single layer on the prepared baking sheet.

Roast in the oven for 25-30 minutes, until the tomatoes are caramelized and tender.

Remove from the oven and let cool slightly. Transfer to a blender or food processor.

Blend until smooth or desired consistency is achieved, adding a splash of water if needed to adjust thickness.

Taste and adjust seasoning as necessary, then transfer the sauce to a serving bowl.
