INGREDIENTS:
- 8 Chicken Drumsticks, if using frozen, thaw before
- 2 Ripe Pears, cored and sliced
- 1 large Red Onion, sliced into wedges
- 3 Tablespoons Extra Virgin Olive Oil
- 1 teaspoons Garlic Powder
- 1 teaspoon Smoked Paprika
- 1 teaspoon Dried Thyme
- Salt and pepper, to taste
- 2 Tablespoons Balsamic Vinegar
- Fresh Parsley and Thyme, for garnish
Step 1
Preheat the oven to 400ºF (200ºC) and prepare a large baking dish or sheet.

In a small mixing bowl, whisk together olive oil, balsamic vinegar, garlic powder, smoked paprika, dried thyme, salt, and pepper.

Place the chicken drumsticks in a large mixing bowl. Pour half of the marinade over the chicken and toss until the drumsticks are well coated.

In the prepared baking dish, place the chicken drumsticks in a single layer. Scatter the pear wedges and red onion slices around the chicken.
