About this Recipe
Indulge in layers of creamy mint mousse, crushed Oreo cookies, and rich chocolate ganache in this Minty Green Oreo Parfait. A decadent treat for any occasion.
INGREDIENTS:
- 2o Oreo Sandwich Cookies, chopped (about 1 1/2 cups)
- 1 – 3.9oz. package JELL-O Instant Chocolate Pudding Mix
- 1 – 4.67oz. package Andes Creme De Menthe Thins
- 2 1/2 cups plus 2 Tablespoons Milk
- 1 cup Heavy Whipping Cream
- 1 – 8 ounce brick Philadelphia Cream Cheese, softened
- 1/2 cup Powdered Sugar
- Green Food Coloring
Step 1
In a food processor, pulse oreo cookies and Andes Mint Chocolates into fine crumbs. Reserve a few tablespoons for garnish.
Step 2
In a medium mixing bowl, whisk together the chocolate pudding mix and milk. Let set for 5 minutes.
Step 3
While the pudding is setting, in a large mixing bowl, beat the heavy cream with an electric mixer until it starts to thicken. Slowly ad in 1/4 cup of powdered sugar. Combine until mix thickens and stiff peaks form. Don’t overbeat or it will become too thick and clumpy. Pour into a bowl and set aside.
Step 4
In the same mixing bowl as heavy cream was used in, beat the cream cheese until smooth. Add in the remaining 1/4 cup of powdered sugar and 2 tablespoons milk. Mix until well combined.
Step 5
Add several drops of green food coloring to the cream cheese mixture, stirring until your desired mint green color is achieved.
Step 6
In individual dessert cups or parfaits glasses, layer the bottom with a spoonful of the crushed Oreo/Andes mixture, followed by a layer of the chocolate pudding, then a layer of the green cream cheese mixture.
Step 7
Repeat the layers, finishing with a dollop of the green cream cheese mixture on top.
Step 8
Garnish each serving with a sprinkle of the reserved Oreo/Andres crumbs and a few pieces of chopped Andes chocolates on top.
STEP 9
Serve immediately or refrigerate until ready to serve. Not recommended to store overnight as oreo layer may become too soft.
