Bursting with flavor, these crispy oven-fried chicken sliders are perfect to enjoy as a snack or meal. Tender chicken marinated in a zesty blend of spices, coated in a crunchy breadcrumb crust, and served on soft slider pretzel buns.

INGREDIENTS:
- 1 1/2 pounds Boneless, Skinless Chicken Thighs or Breasts
- 1 cup Buttermilk
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Paprika
- 1 cup All-Purpose Flour
- 1 cup Panko Breadcrumbs (for extra crunch)
- 1 teaspoon Dried Oregano
- 1 teaspoon Cayenne Pepper (optional for heat)
- Salt and Pepper, to taste
- 6 Pretzel Slider Buns
- 12 Dill Pickle Slices
- 1/2 cup Mayonnaise
- 1 Tablespoon Dijon Mustard
- Cole Slaw (optional)
Step 1
In a mixing bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken, ensuring it’s fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
Step 2
Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper or lightly grease it.
Step 3
In a shallow dish, place the flour. In a second bowl, mix together the breadcrumbs, oregano, cayenne pepper (if using), and a pinch of salt and pepper.
Step 4
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece of chicken in the flour first, then dip it back into the buttermilk, and finally coat it with the breadcrumb mixture, pressing down lightly to adhere.
Step 5
Place the coated chicken pieces on the prepared baking sheet. Spray the tops lightly with cooking spray or drizzle with olive oil to help them crisp up. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and golden brown, flipping halfway through.
Step 6
While the chicken is baking, combine the mayonnaise and Dijon mustard in a small bowl. Prepare the slider buns by toasting them lightly, if desired.
Step 7
Once the chicken is done, place a piece of chicken on each bun. Top with coleslaw and pickle slices or lettuce, tomato and pickle slices, along with your choice of sauce.

Serve immediately while hot and crispy. Enjoy!
