INGREDIENTS:
FOR THE TACOS:
- 1 pound Large Shrimp, peeled and deveined
- 2 Tablespoons Extra-Virgin Olive Oil
- 2 teaspoons Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 cup Red Cabbage, shredded
- 1 Red Onion, finely diced
- 1/4 cup Cotija Cheese
- Juice of 1 Lime
- Salt and Pepper, to taste
FOR CREAMY CILANTRO SAUCE:
- 1/2 cup Sour Cream or Plain Greek Yogurt
- 1/4 cup Mayonnaise
- 1/4 cup Fresh Cilantro, chopped
- 1 clove Garlic, minced
- Salt, to taste
TO PREPARE THE TACOS
Step 1
In a mixing bowl, combine the olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper.
Step 2
While the shrimp are marinating, prepare the Creamy Cilantro Sauce by mixing in a separate bowl, the sour cream (or Greek yogurt), mayonnaise, chopped cilantro, lime juice, minced garlic, and a pinch of salt. Stir until smooth and creamy. Adjust seasoning to taste. Refrigerate until ready to serve.
Step 3
Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through. Remove from heat.
Step 4
In the same skillet or another pan, warm the tortillas for about 30 seconds on each side until pliable.
Step 5
On each warm torilla, layer the shredded cabbage or lettuce, cooked shrimp, red onoin and sprinkle with Cotija cheese. Drizzle generously with the creamy cilantro sauce.
Step 6
Garnish with additional cilantro, if desired, and serve with lime wedges on the side.
