About this Recipe
Light, fresh and oh so yummy, these Star Studded Parfait Cups are the perfect red, white and blue dessert for Memorial Day, 4th of July or your next summer barbecue!
Filled with layers of fresh blueberries, sweet strawberries, vanilla pudding, and crushed Nilla Wafers, these fun parfaits are easy to whip together and guaranteed to please a crowd.
INGREDIENTS:
- 2 cups Mixed Berries (raspberries, blueberries, blackberries, diced strawberries), plus extra for garnish
- 1 package (3.4oz.) Vanilla Instant Pudding Mix
- 1 1/2 cups Cold Milk
- 1/4 cup Granulated Sugar
- 1/2 cup Butter, melted
- 2 cups Nilla Wafers, crushed (60 cookies)
- Whipped Topping, for serving
Step 1
In a small to medium mixing bowl, whisk together the pudding mix and cold milk for 2 minutes. Refrigerate for 5 minutes or longer to allow the pudding to set.
Step 2
While the pudding is setting, wash and rinse berries and pat them down to dry. Chop the strawberries into 8ths and mix all the berries together. Set aside.
Step 3
In a food processor, blender or in a sealed Ziploc bag with a rolling pin, finely crush the Nilla Wafers.
Step 4
In a medium bowl, add the crushed wafers, melted butter and sugar until it is well combined and crumbly.
Step 5
In individual parfait glasses, layer the bottom of each glass with two spoonfuls of the Wafer crust mixture.
Step 6
Top the wafer crust with three spoonsfuls of the vanilla pudding mixture. Top with two spoonfuls of the mixed berries mixture.
Step 7
Continue to layer the parfait glasses with a layer of wafer crust, followed by the pudding and mixed berries mixture into you get to almost the top of the parfait glass.
Step 8
Finish each parfait glass with a thin layer of whipped topping and a few berries for garnish. Enjoy!
SERVINGS NOTES:
Depending how much you add to each layer will ultimately determine how many layers and parfaits you have.
