A healthy twist on a classic favorite, these Sizzling Chicken Burrito Bowls are packed with protein, fresh veggies, and paired with bold authentic flavors to deliver a delicious and nutritious weeknight dinner!
INGREDIENTS:
- 1 pound Boneless, Skinless Chicken Breasts, sliced into 1-inch strips
- 1 cup White or Brown Rice, cooked
- 1 – 15oz. can Black Beans, drained and rinsed
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 small Red Onion, sliced
- 1 large Avocado, sliced
- 1/4 cup Fresh Cilantro, chopped
- 1 Lime, sliced into wedges
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Garlic Powder
- Salt and Pepper, to taste
- Extra Virgin Olive Oil, for cooking
Step 1
In a small bowl, mix cumin, paprika, garlic powder, salt, and pepper. Rub the spice mixture onto the chicken slices.
Step 2
Heat olive oil in a skillet over medium-hgih heat. Cook the chicken slices until browned and cooked through.
Step 3
In the same skillet, add sliced bell peppers and red onion. Sauté until tender.
Step 4
Build your burrito bowl by layering rice, black beans, cooked chicken, sautéed vegetables, avocado slices, a scoop of picco de gallo and chopped cilantro.
Step 5
Serve with lime wedges on the side for an extra burst of flavor.
