About this Recipe

A comforting and flavorful dish to celebrate St. Patrick’s Day, this Savory Guinness Pie has a hearty beef and vegetable filling, simmered in rich Guinness gravy, topped with a flaky pastry crust.

INGREDIENTS:

  • 1 1/2 lbs. Beef Stew Meat, cut into 1-inch cubes
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Large Onion, diced
  • 3 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 Large Potatoes, diced
  • 1 cup Guinness Beer
  • 2 cups Beef Broth
  • 2 Tablespoons Cornstarch
  • Salt and Pepper, to taste
  • 2 sheets Puff Pastry, thawed – 1 to use for decorations
  • 1 Egg, beaten

Step 1

Preheat the oven to 400ºF (200ºC).

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.  Add the stewing beef and brown on all sides.  Remove the beef from the pot and set aside.

Step 3

In the same pot, add the diced onion and garlic.  Sauté until the onion is translucent.

Step 4

Add the carrots and potatoes to the pot, and cook for 5 minutes.

Step 5

Return the browned beef to the pot. Pour in the Guinness beer and beef broth.  Bring to a simmer, then reduce the heat and let it simmer for 20-25 minutes until the beef is tender and the vegetables are cooked.

Step 6

In a small bowl, mix the cornstarch with a few tablespoons of water to create a slurry.  Stir the slurry into the beef and vegetable mixture, and simmer for another 5 minutes until the sauce thickens.

Step 7

Divide the beef and vegetable mixture among individual ramekins or transfer to a large baking dish.

Step 8

Roll out the puff pastry sheet and cut it into circles or squares to fit the ramekins or baking dish.  Place the puff pastry on top of the beef and vegetable mixture, and brush with the beaten egg.

Step 9

Place the ramekins or baking dish on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and puffed. Serve hot and ENJOY!

Decorating Option:

Roll out the 2nd puff pastry sheet and using miniture cookie cutters (design of your choice), cut shapes out and place them on top of first puff pastry sheets.  Brush with beaten egg and bake accordingly.
