INGREDIENTS:
- 2 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/4 cup Brown Sugar
- 2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Salt
- 1 cup Fresh Organic Apples, peeled and diced
- 1/2 cup Unsalted Butter, melted
- 2 large Eggs
- 1/2 cup Whole Milk
- 1 teaspoon Vanilla Extract
DIRECTIONS
Step 1
Preheat oven to 375ºF and line a muffin tin with paper liners or lightly grease.
Step 2
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon and salt.
Step 3
In a separate bowl, beat eggs then whisk in melted butter, milk, and vanilla extract until well combined.
Step 4
Pour the wet ingredients into the dry ingredients. Stir gently with a wooden spoon or spatula just until combined. Do not overmix – lumps are fine.
Step 5
Fold in the diced fresh apples gently, until evenly distributed, without overmixing.
Step 6
Divide batter evenly into muffins cups, filling about 3/4 full.
Step 7
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
Step 8
Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
VARIATIONS:
FOR AN EXTRA APPLE FLAVOR: Toss the diced apples with a teaspoon of lemon juice before folding them.
FOR A STREUSEL TOPPING:
- 1/4 cup All-Purpose Flour
- 1/4 cup Brown Sugar
- 1/4 cup Cold Unsalted Butter, cubed
- 1/2 teaspoon Cinnamon
DIRECTIONS
- In a small bowl, mix brown sugar, flour, and cinnamon.
- Cut in cold butter until mixture is crumbly.
- Sprinkle streusel topping evenly over muffin batter before baking.
