Tender and juicy, this succulent chicken is a sweet and tart dish that comes together easy with minimal fuss.
Perfect for entertaining as well as a quick weeknight meal!
INGREDIENTS:
- 4 Bone-In, Skin-On Chicken Breasts
- 2 cups Pomegranate Juice, room temperature
- 1/4 cup Honey
- 3 Tablespoons Balsamic Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Rosemary
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 cups Mixed Vegetables (e.g. Carrots, Sweet Potatoes, Brussel Sprouts)
- Fresh Pomegranate Seeds, for garnish
- Fresh Parsley, for garnish
Step 1
Preheat the oven to 425ºF (220ºC) and line a baking sheet with parchment paper.
Step 2
In a saucepan, combine pomegranate juice, honey, balsamic vinegar, olive oil, garlic powder, rosemary, salt, and black pepper. Bring to a simmer over medium heat, stirring occasionally, until the mixture has reduced by half thickened slightly, about 15-20 minutes.
Step 3
While the glaze is simmering, arrange the chicken breasts on the prepared baking sheet. Brush the chicken with a generous amount of the pomegranate glaze, reserving some for later.
Step 4
In a mixing bowl, toss the mixed vegetables with olive oil, salt, and pepper. Spread the vegetables in a single layer on another prepared baking sheet.
Step 5
Place both baking sheets in the preheated oven. Roast the chicken for 25-30 minutes or until cooked through and the skin is crispy. At the same time, roast the vegetables for 20-25 minutes or until tender and slightly caramelized.
Step 6
Remove the chicken and vegetabls from the oven. Brush the chicken with the remaining pomegranate glaze and let it rest for 5 minutes before serving.
Step 7
To plate, place a glazed chicken breast on each plate and arrange a portion of roasted vegetables alongside. Garnish with fresh pomegranate seeds and parsley, if desired.
STEP 8
Serve immediately and enjoy!
NOTE
You can easily double the recipe if serving more people or if you desire leftovers.
