FOR SPONGE CAKE:
- 4 Large Eggs, at room temperature
- 1 cup Granulated Sugar
- 1 cup All-Purpose Flour
- 1/4 teaspoon Salt
- 1/4 cup Unsalted Butter, melted
- 1 teaspoon Vanilla Extract
- Zest of 1 Lemon
- 2 Ripe Asian Brown Pears, peeled and diced
- Powdered Sugar, for dusting (optional)
- Whipped Cream or Mascarpone Cheese, for serving (optional)
PEAR TOPPING:
- 2 ripe Asian Brown Pears, cored and thinly sliced
- 2 Tablespoons Brown Sugar
- 1 teaspoon Cinnamon
- Juice of 1/2 lemon
Step 1
Preheat the oven to 350ºF (175ºC). Grease and flour a 9-inch round cake pan or line it with parchment paper.

In a large mixing bowl, whisk the eggs and granulated sugar together until light and fluffy, about 5-7 minutes.

In a separate mixing bowl, sift the flour, baking powder, and salt together, then gently fold it into the egg mixture using a spatula. Be careful not to deflate the batter.

Fold in the melted butter, vanilla extract, and lemon zest until just combined.

Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

While the cake is cooling, prepare the pear topping by combing in a bowl the sliced pears, brown sugar, cinnamon, and lemon juice. Toss gently to coat.
