INGREDIENTS:
- 2 cups Cooked Turkey, shredded or diced
- 1 cup Leftover Stuffing
- 1 cup Mixed Vegetables (peas, carrots, corn, and green beans)
- 1 cup Turkey or Chicken Broth
- 1/2 cup Heavy Cream
- 1 small White Onion, diced
- 2 cloves Garlic, minced
- 1 teaspoon Thyme
- 1 teaspoon Rosemary
- 1 Tablespoon Extra-Virgin Olive OIl
- Salt and Pepper, to taste
- 1 large Egg, beaten (for egg wash)
Step 1
Preheat the oven to 375ºF (190ºC).
Step 2
In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until translucent.

Add the frozen mixed vegetables, turkey, thyme, and rosemary. Stir and cook for about 5 minutes.

Pour in the broth and heavy cream, stirring to combine. Season with salt and pepper. Let simmer for 5 minutes.

In a large pie dish, pour the turkey and vegetable mixture into the dish, spreading it evenly.

Sprinkle the leftover stuffing evenly over the top of the vegetable mixture. Brush the top with the beaten egg for a golden finish.

Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

Remove the pot pie from the oven and let it cool for about 5-10 minutes before slicing.
