This hearty dish combines tender turkey, vibrant veggies, and a savory sauce, all encased in a flavorful stuffing base.  The crust adds a comforting twist that elevates traditional pot pie recipes. 

Perfect for a hearty meal that celebrates your festive feast’s remains.

INGREDIENTS:

  • 2 cups Cooked Turkey, shredded or diced
  • 1 cup Leftover Stuffing
  • 1 cup Mixed Vegetables (peas, carrots, corn, and green beans)
  • 1 cup Turkey or Chicken Broth
  • 1/2 cup Heavy Cream
  • 1 small White Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 Tablespoon Extra-Virgin Olive OIl
  • Salt and Pepper, to taste
  • 1 large Egg, beaten (for egg wash)

Step 1

Preheat the oven to 375ºF (190ºC).

Step 2

In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until translucent.

Step 3

Add the frozen mixed vegetables, turkey, thyme, and rosemary. Stir and cook for about 5 minutes.

Step 4

Pour in the broth and heavy cream, stirring to combine. Season with salt and pepper. Let simmer for 5 minutes.

Step 5

In a large pie dish, pour the turkey and vegetable mixture into the dish, spreading it evenly.

Step 6

Sprinkle the leftover stuffing evenly over the top of the vegetable mixture.  Brush the top with the beaten egg for a golden finish.

Step 7

Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

Step 8

Remove the pot pie from the oven and let it cool for about 5-10 minutes before slicing.
