INGREDIENTS:
- 1 cup Dried Lentils (green or brown), rinsed and drained
- 1lb. Boneless, Skinless Chicken Breasts, shredded (2 cups)
- 2 large Carrots, shredded
- 4 cups Organic Chicken Broth (low-sodium recommended)
- 1 medium White Onion, diced
- 2 cloves Garlic, minced
- 1 teaspoon Dried Thyme
- 1 teaspoon Ground Cumin
- 1 Bay Leaf
- 1 teaspoon Paprika
- Salt and Pepper, to taste
- 2 Tablespoons Extra-Virgin Olive Oil
- Fresh Parsley or Cilantro, for garnish (optional)
Step 1
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
Step 2
Add the diced chicken to the pot and season with salt, pepper, cumin, and paprika.
Step 3
Stir in the rinsed lentils, shredded carrots, and chicken broth. Bring the mixture to a boil.
Step 4
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes or until the lentils are tender and the chicken is cooked through.
Step 5
Taste the soup and adjust the seasoning with more salt and pepper, if needed. Remove Bay Leaf.
Step 6
Ladle the soup into bowls and garnish with fresh parsley or cilantro, if desired.
TIP:
This soup can be made in advance and stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently on the stove before serving!
