INGREDIENTS:

  • 4 large Russet Potatoes
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1/2 cup Sour Cream
  • 1/4 cup Milk
  • 4 strips Bacon, cooked and crumbled
  • 2 Green Onions, finely chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 Tablespoon Fresh Parsley, chopped
  • Olive Oil, for brushing
  • Paprika, for garnish

Step 1

Preheat your oven to 400ºF (200ºC).

Step 2

Scrub the russet potatoes clean under running water and dry them.  Prick each potato a few times with a fork to allow steam to escape. Brush with olive oil and sprinkle with salt.

Step 3

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until the skin is crispy and a knife slides easily through the flesh.

Step 4

Remove from the oven and let cool slightly, about 10 minutes. Carefully cut each potato in half lengthwise. Using a spoon, scoop out the insides into a mixing bowl, leaving a small border of potato inside the skins to maintain their shape.

In a medium mixing bowl, mash the scooped out potato with sour cream, milk, garlic powder, salt, and pepper until smooth.

Step 7

Stir in cheddar cheese, crumbled bacon, green onions, and parsley until well combined.

Step 8

Spoon the filling back into the potato shells, mounding generously.

STEP 9

Return the stuffed potatoes to the oven and bake for an additional 20 minutes, or until golden and warmed through.

STEP 10

Garnish with additional green onions and parsley, if desired before serving.
