INGREDIENTS:
- 1 lb. Pork Tenderloin
- 1 cup Buttermilk
- 1 cup All-Purpose Flour
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- Avocado Oil, for frying
- 3 medium Fuji Apples, cored and sliced
- 2 Tablespoons Brown Sugar
- 1 teaspoon Ground Cinnamon
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Unsalted Butter, melted
Step 1
Place the pork tenderloin in a bowl and cover it with buttermilk. Let it marinate in the refrigerator for at least 1 hour (preferably overnight) to enhance tenderness and flavor.

Preheat your oven to 350ºF (175ºC).

In a large bowl, toss the apple slices with brown sugar, cinnamon, lemon juice, and melted butter until evenly coated. Spread the apple slices in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until the apples are tender and caramelized, stirring halfway through.

In a shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper.

Remove the pork from the buttermilk, allowing any excess to drip off, then dredge it in the seasoned flour mixture, coating it completely. In a large skillet, heat about 1/2 inch of extra-virgin olive oil over medium-high heat. Once the oil is hot, carefully add the pork tenderloin.

Fry the pork for about 4-5 minutes on each side or unitl golden brown and cooked through (internal temerature should reach 145ºF or 63ºC). Remove from the skillet and let it rest on a paper towel-lined plate.

Slice the fried pork tenderloin into medallions and serve warm alongside the baked cinnamon apple slices. Drizzle any remaining juices from the apples over the pork for added sweetness. Enjoy!
