INGREDIENTS:

  • 2 large Cucumbers, sliced 1/4″ thick rounds
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Feta Cheese, cubed
  • 1/2 Red Onion, thinly sliced
  • 1/4 cup Fresh Cilantro, chopped
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoons White Wine Vinegar (or Apple Cider Vinegar)
  • 1 teaspoon Honey
  • Salt and Pepper, to taste

Step 1

Wash the cucumbers and cherry tomatoes. Cut the tomatoes into 1/4″ inch slices and halve the cherry tomatoes. Place them in a large mixing bowl.

Step 2

Add the thinly sliced red onion, cubed Feta cheese and chopped fresh cilantro to the bowl with the cucumbers and tomatoes.

Step 3

In a small mixing bowl, whisk together the olive oil, white wine vinegar, honey, salt and pepper. Adjust seasoning to taste.

Step 4

Pour the dressing over the cucumber mixture and gently toss to coat all the vegetables evenly.

Step 5

Let the salad sit for about 10-15 minutes to allow the flavors to meld. Served chilled or at room temperature.

SERVING OPTIONS

Serve as an appetizer to a main course or as a side dish to grilled meat or seafood.
