Rustic, fresh, and hearty, this Creamy Asparagus and Potato Purée is a vibrant dish that combines fresh green asparagus with buttery Yukon potatoes, enhanced by a touch of garlic and a splash of cream.
INGREDIENTS:
- 1-pound Fresh Green Asparagus, tough ends trimmed and cut into 1-inch pieces
- 1 pound Yukon Gold Potatoes, peeled and cubed
- 2 cloves Garlic, minced
- 1/2 cup Heavy Cream or Half-and-Half (for a lighter version)
- 2 Tablespoons Unsalted Butter
- 1/4 cup Grated Parmesan Cheese (optional)
- Salt and Freshly Ground Black Pepper, to taste
- Garnish Options: Crispy Bacon Pieces, Fresh Chives, A Drizzle of Olive Oil, a Sprinkle of Parmesan Cheese
Step 1
Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.
Step 2
While the potatoes are boiling, steam or blanch the asparagus until bright green and tender-crisp, about 5-7 minutes. Be careful not to overcook it! Drain well.
Step 3
In the same pot (after draining the potatoes), melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Step 4
Add the drained potatoes and asparagus to the pot with the garlic butter. Using an immersion blender, blend until smooth. Alternatively, you can use a regular blender (working in batches) or a food processor.
Step 5
Stir in the heavy cream (or half-and-half) and Parmesan cheese (if using) until well combined.
Step 6
Season with salt and pepper to taste. Adjust cream or butter for desired consistency. Serve immediately, garnished with crispy bacon pieces, fresh chives, a drizzle of olive oil, or a sprinkle of Parmesan cheese, if desired.
CHEF’S NOTES:
For a vegan version, substitute the heavy cream with a plant-based cream and omit the Parmesan cheese. You can also use olive oil instead of butter.
COOKING PRECAUTIONS:
If you don’t have an immersion blender, be extremely careful when blending hot liquids in a regular blender. Vent the lid to prevent pressure build-up.
SERVING SUGGESTION:
This purée makes a delicious side dish for roasted chicken, fish, or grilled vegetables.
