INGREDIENTS:
SHRIMP
- 1 pound Large Shrimp, peeled and deveined
- 1 teaspoon Garlic Powder
- 2 large Eggs
- 1 cup Shredded Coconut
- 1 cup Panko Breadcrumbs
- Cooking Spray
- Salt and Pepper, to taste
GARLIC AIOLI DIP
- 1/2 cup Mayonnaise
- 2 Garlic Cloves, minced
- 1 Tablespoon Lemon Juice
- Salt and Pepper, to taste
Step 1
Preheat the air fryer to 400ºF (200º C).
Step 2
In a shallow dish, mix the shredded coconut wiht the Panko breadcrumbs and a pinch of salt and pepper.
Step 3
In another shallow dish, beat the eggs with the garlic powder.
Step 4
Dip each shrimp into the egg mixture, allowing any excess to drip off, then coat it in the coconut-Panko mixture, pressing gently to adhere.
Step 5
Place the coated shrimp in a single layer in the air fryer basket, lightly coat with cooking spray.
Step 6
Air fry the shrimp in batches for 6-8 minutes, or until golden and crispy, turning halfway through cooking.
Step 7
While the shrimp is cooking, prepare the garlic aioli dip by combining the mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Mix well and refrigerate until ready to serve.
Step 8
Once the shrimp is cooked, transfer them to a serving platter and serve with the garlic aioli dip.
SERVING SUGGESTIONS:
