The perfect treat to beat the heat, these Chocolate Raspberry Ice Cream Sandwiches are made with velvety homemade raspberry ice cream that is sandwiched between two homemade chocolatey cookies.
Homemade Raspberry Ice Cream:
- 2 cups Fresh Raspberries
- 1 cup Sugar
- 2 cups Heavy Cream
- 1 cup Whole Milk
- 1 teaspoon Vanilla Extract
HOMEMADE CHOCOLATE SANDWICH COOKIES:
- 1 cup All-Purpose Flour
- 1/2 cup Unsweetened Cocoa Powder
- 1/2 teaspoon Baking Soda
- 1/4 taspoon Salt
- 1/2 cup Unsalted Butter, softened
- 3/4 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
Step 1
Start by making the raspberry ice cream. In a blender, puree the raspberries with the sugar until smooth. Strain the mixture through a fine-mesh sieve to remove the seeds.
Step 2
In a mixing bowl, whisk together the raspberry puree, heavy cream, milk, and vanilla extract. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
Step 3
While the ice cream is freezing, make the chocolate sandwich cookies. Preheat the oven to 350ºF (180ºC) and line a baking sheet with parchment paper or a baking liner.
Step 4
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Roll out the dough on a floured surface to about 1/4-inch thickness. Use a small cookie cutter to cut out cookie rounds. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until set.
Step 6
Once the cookies and ice cream are ready, assemble the ice cream sandwiches by placing a scoop of raspberry ice cream between two chocolate cookies.

Serve the raspberry-chocolate ice cream sandwiches immediately, or wrap them individually in plastic wrap and freeze for later enjoyment. ENJOY!
