About this Recipe
Juicy and moist, this Caprese Stuffed Chicken recipe is filled with fresh tomatoes, mozzarella, and basil leaves, then served with a sweet balsamic glaze.
INGREDIENTS:
- 4 boneless, skinless Chicken Breasts
- 8 slices Fresh Mozzarella Cheese
- 2 large Tomatoes, sliced
- 1 bunch Fresh Basil Leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 4 cloves Garlic, minced
- 2 Tablespoons Balsamic Glaze
- 1 Tablespoon Brown Sugar
- Extra Virgin Olive Oil, to coat pan
- Salt and Pepper, to taste
Step 1
Preheat the oven to 375ºF (190ºC).
Step 2
Place the chicken breasts on a cutting board and use a sharp knife to make a horizontal slit in each breast to create a pocket, being careful not to cut all the way through.
Step 3
Season the inside of the chicken breasts with salt and pepper.
Step 4
Stuff each chicken breast with 2 slices of mozzarella, a couple of tomatoe slices, and a few basil leaves.
Step 5
Insert toothpicks diagonally to secure the opening of the chicken breasts to keep the filling inside. Then sprinkle each chicken breasts with oregano, salt and basil.
Step 6
Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
Step 7
Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown. Be careful when flipping.
Step 8
In a small bowl, mix together the garlic, balsamic vinegar and brown sugar.
Step 8
Pour the mixture over the chicken and then transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Step 9
Remove the toothpicks from the chicken breasts before serving.
Step 10
Plate the Capreses Stuffed Chicken Breasts and drizzle with extra balsamic vinegar juice and garnish with fresh basil leaves, if desired.
