INGREDIENTS:
- 1 cup Bob’s Red Mill Organic Whole Grain Buckwheat
- 1 cup Almond Milk (or any milk of your choice)
- 1 medium Banana, frozen
- 1 cup Fresh Blueberries
- 1 cup Plain Greek Yogurt
- 1/4 cup Mixed Nuts (almonds, walnuts, or pecans)
- 2 Tablespoons Bob’s Red Mill Organic Whole Chia Seeds
- 1 Tablespoon Bee Pollen
- 1 Tablespoon Honey or Maple Syrup (optional)
- Pinch of Salt
- Fresh Blueberries, nuts, shredded coconut for toppings (optional)
Step 1
Rinse the raw buckwheat groats under cold water until the water runs clear. In a saucepan, combine the rinsed buckwheat, water or milk, maple syrup (if using), and salt.
Step 2
Bring to a boil over medium heat, then reduce the heat to low and simmer for about 10-15 minutes, stirring occasionally, until the buckwheat is tender and has absorbed most of the liquid. Remove from heat and let it cool slightly.
Step 3
In a blender, combine the cooked buckwheat porridge, banana, fresh blueberries, yogurt, chia seeds, and nut butter.
Step 4
Blend until smooth and creamy, adding a little more liquid if necessary to reach your desired consistency.
Step 5
Pour the smoothie mixture into bowls, dividing evenly. Top with a layer of fresh blueberries, mixed nuts, chia seeds and a drizle of bee pollen for added nutrition and flavor.
