About this Recipe
The perfect treat for a leisurely morning, these Blueberry Bliss Bars combine the sweetness of fresh blueberries with the warm spice of cinnamon to start your day in a delightful way.
INGREDIENTS:
- 2 cups All-Purpose Flour
- 2 cups Old Fashioned Oats
- 2 cups Fresh Organic Blueberries
- 1/2 teaspoon Cinnamon
- 1/2 cup Butter, Cold and Cubed
- 1/2 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 2 Tablespoons Corn Starch
- 1 cup Granulated Sugar
- 2 Tablespoons Lemon Juice
- 1/4 cup Finely Chopped Almonds
Step 1
Preheat the oven to 350ºF (175ºC) and grease a 9×9 inch baking dish.
Step 2
In a medium bowl, mix together the flour, oats, 1 cup sugar, cinnamon, almonds and baking soda. Cut in the butter with a pastry blender until the mixture resembles coarse crumbs.
Step 3
Take half of the crumb mixture and press it into the bottom of the prepared baking dish.
Step 4
In a medium saucepan, bring fresh blueberries, remaining 1/2 cup sugar, cornstarch, and lemon juice to a boil, stirring constantly, until mixture is thickened, about 2-3 minutes.
Step 5
Take blueberry mixture and spread it evenly over oat/flour crust and sprinkle with remaining oat mixture.
Step 6
Baked in the preheated oven until topping is just browned, about 25 minutes. Cool completely, and then cut into 12 bars.
