INGREDIENTS:
- 1 1/2 cups All-Purpose Flour
- 1 cup Fresh Blackberries, plus extra for topping
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar, packed
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 large Egg
- 1/2 cup Buttermilk
- 1/3 cup Vegetable Oil, or melted butter
- 1 teaspoon Vanilla Extract
- 1/2 cup Semi-Sweet Chocolate Chips
Step 1
Preheat your oven to 375ºF (190ºC). Line a muffin tin with paper liners or spray with non-stick cooking spray.
Step 2
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.
Step 3
In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract until smooth.
Step 4
Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
Step 5
Gently fold in the fresh blackberries and chocolate chips, ensuring they are evenly distributed throughout the batter.
Step 6
Divide the batter evenly among the muffin cups, filling each about two-thirds full. For an extra touch, place a few additional blackberries on top of each muffin.
Step 7
Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
STEP 8
Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
