INGREDIENTS:
- 1 3/4 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/4 cup Brown Sugar, Packed
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 large Egg
- 1/2 cup plain Yogurt (Greek or regular)
- 1/4 cup Vegetable Oil
- 1/4 cup Milk
- 1 teaspoon Vanilla Extract
- 1 cup Diced Fresh Apricots (about 4-5 apricots)
DIRECTIONS
Step 1
Preheat your oven to 375ºF (190ºC).
Step 2
Line a 12-cup muffin tin with paper or silcone liners or grease it well.
Step 3
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
Step 4
In a separate bowl, whisk together the egg, yogurt, vegetable oil, milk, and vanilla extract until well combined.
Step 5
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. A few lumps are okay.
Step 6
Fill each muffin cup about 2/3 full with the batter.
Step 7
Sprinkle the tops of the muffins with turbinado sugar or sanding sugar for a sparkly finish.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Use ripe but firm apricots for the best flavor and texture.
