INGREDIENTS:
- 12oz. Penne Pasta
- 2 Tablespoons Extra-Virgin Olive Oil
- 2 Boneless, Skinless Chicken Breasts (about 1lb.), cut into bite-sized pieces
- 2 cloves Garlic, minced
- 1 cup Crushed Tomatoes or Tomato Paste
- 1/2 cup Kettle & Fire Chicken Broth
- 1/4 teaspoon Red Pepper Flakes
- 1/4 cup Fresh Parsley, chopped
- Salt & Black Pepper, to taste
- 1/4 cup Grated Parmesan Cheese (optional)
DIRECTIONS
Step 1
Cook the penne according to package directions in salted water until al dente. Reserve 1/2 cup of pasta water, then drain. Set aside.
Step 2
While the pasta cooks, season the chicken pieces with salt and pepper.
Step 3
In a large skillet, heat olive oil over medium-high heat. Add the chicken and sauté until lightly browned and cooked through, about 5-7 minutes. Transfer to a plate.
Step 4
In the same skillet, add a bit more oil if needed and sauté the garlic for about 30 minutes until fragrant.
Step 5
Add the crushed tomatoes and chicken broth. Bring to a gentle simmer. Stir in red pepper flakes (if using) and lemon juice.
Step 6
Return the chicken to the sauce and simmer for 4-5 minutes to meld flavors. If the sauce thickens too much, whisk in a little reserved pasta water.
Step 7
Add the cooked penne to the skillet and toss to coat in the sauce. Stir in chopped parsley.
Step 8
Taste and adjust seasoning with salt and pepper. If desired, sprinkle with Parmesan cheese and a little extra parsley.
Step 9
Serve immediately, with extra Parmesan on the side.
FOR A LITTER VERSION:
Use half-in-half or omit the cheese. You can also substitute ground chicken or turkey for the diced chicken, if you prefer.
