Enjoy a luscious twist on traditional strudel with this homemade blueberry puff pastry recipe. Flaky, golden layers encase a sweet and tangy blueberry filling, perfect for a breakfast treat or delightful dessert.

INGREDIENTS:
- 1 package Frozen Store-Bought Puff Pastry (2 sheets), thawed
- 2 cups Fresh Blueberries (see note about frozen)
- 1/2 cup Granulated Sugar (adjust to taste)
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Cornstarch
- 1/2 teaspoon Cinnamon
- 1 large Egg (beaten, for egg wash)
- Powdered Sugar (for dusting)
- 1 Tablespoon Butter (melted, for brushing)
Step 1
Preheat your oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
Step 2
In a medium bowl, combine the blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon. Gently toss to coat the blueberries evenly. Set aside to let the mixture sit for about 10 minutes.
Step 3
Roll out the thawed puff pastry sheets on a lightly floured surface. Each sheet should be about 12×10 inches. Cut each pastry sheet into a rectangle, approximately 12 inches wide and 10 inches long.

Place one of the pastry rectangles on the prepared baking sheet. Cut 1-inch strips along the sides of the pastry, leaving the center intact for the filling. Make sure the cuts are evenly spaced.
Step 5
Spoon the blueberry filling into the center of the pastry rectangle. Make sure to distribute the filling evenly.
Step 6
Starting from the top, fold the pastry strips over the filling, alternating sides to create a braided effect. Gently press down to seal the edges.
Step 7
In a small bowl, whisk together the egg and milk to create an egg wash. Brush the top of the braided strudel with the egg wash for a golden finish.

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.

Allow the strudel to cool for a few minutes before dusting with powdered sugar, and slicing. Serve warm or at room temperature.
NOTE
If using frozen blueberries, allow to thaw completely and remove any excess water.
