INGREDIENTS:

  • 8 Chicken Drumsticks, if using frozen, thaw before
  • 2 Ripe Pears, cored and sliced
  • 1 large Red Onion, sliced into wedges
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoons Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Thyme
  • Salt and pepper, to taste
  • 2 Tablespoons Balsamic Vinegar
  • Fresh Parsley and Thyme, for garnish

Step 1

Preheat the oven to 400ºF (200ºC) and prepare a large baking dish or sheet.

Step 2

In a small mixing bowl, whisk together olive oil, balsamic vinegar, garlic powder, smoked paprika, dried thyme, salt, and pepper.

Step 3

Place the chicken drumsticks in a large mixing bowl. Pour half of the marinade over the chicken and toss until the drumsticks are well coated.

Step 4

In the prepared baking dish, place the chicken drumsticks in a single layer. Scatter the pear wedges and red onion slices around the chicken.

Step 5

Drizzle the remaining marinade over the pears and onions, ensuring everything is well coated.

Step 6

Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165ºF (75ºC). The skin should be golden brown and crispy.

Step 7

Once cooked, remove from the oven and let it rest for a few minutes. Serve the chicken drumsticks with the roasted pears and red onions, garnished with fresh thyme or parsley, if desired.

SERVINGS NOTES:

Serve with a wine that is equally simple to avoid overwhelming the food. For example, a full-flavored red, a medium-bodied rosé, or a dry white. Also, an oaked Chardonnay or a Pinot Noir will be great.
