About this Recipe
Chewy, fruity, and nutritious, these Tangy Raspberry Fruit Rollups are easy to make and packed with vibrant raspberry flavor. Bursting with antioxidants and perfect for a healthy snack or a fun lunchbox treat.
INGREDIENTS:
- 2 cups Fresh Raspberries
- 2 Tablespoons Honey or Maple Syrup (opitonal)
- 1 Tablespoon Lemon Juice
- 1 teaspoon Vanilla Extract (optional)
- A pinch of Salt
Step 1
Preheat oven to 170ºF (77ºC) and line a baking sheet with parchment paper.
Step 2
In a blender or food processor, combine fresh raspberries, honey (if using), lemon juice, vanilla extract, and salt. Blend until smooth.
Step 3
Pour the raspberry mixture onto the prepared baking sheet, spreading it evenly to about 1/8 inch thick.
Step 4
Place the baking sheet in the oven and dry the fruit mixture for about 6-8 hours, or until it is no longer sticky to the touch.
Step 5
Once dried, remove the baking sheet and let it cool completely.
Step 6
Cut the fruit leather into strips or roll it up, using parchment paper to separate layers, if needed.
Step 7
Store in an airtight container at room temperature or refrigerate for longer freshness.
NOTE
You can also use frozen raspberries. If you do so, thaw slightly before using.
