A comforting meal for any occasion, this Chicken Meatball Orecchiette with Broccoli dish has Caramelized Onion Meatballs, broccoli, and Parmesan Cheese.
INGREDIENTS:
- 1 package Adell’s All-Natural Caramelized Onion Chicken Meatballs, cooked and finely chopped
- 1 medium White Onion, finely chopped
- 1 head of Organic Broccoli, cut into small florets
- 1-12oz. package Orecchiette Pasta
- 1/2 cup Grated Parmesan Cheese
- 2-3 Tablespoons Extra-Virgin Olive Oil
- Salt and Freshly Ground Pepper, to taste
Step 1
In a large pot, bring salted water to a boil and cook the orecchiette according to the package instructions until a la dente. Drain and set aside.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken meatballs and grind up finely as they cook, until the grounded meatballs are cooked through. Remove the ground meatballs from the skillet and set aside.
Step 3
In the same skillet, add another tablespoon of olive oil, if needed. Sauté the chopped white onion unti lit becomes translucent, then add the broccoli florets. Cook for 5-7 minutes or until the broccoli is tender-crisp.
Step 4
Add the cooked orecchiette to the skillet with the broccoli and onions. Toss to combine and season with salt and freshly ground pepper to taste.
Step 5
Return the cooked grounded chicken meatballs to the skillet and gently mix them with the pasta and vegetables.
Step 6
Sprinkle the grated parmesan cheese over the pasta and meatball mixture, and drizzle with the remaining olive oil.
Step 7
Serve in a large family style pasta bowl or individual plates, garnishing with additional parmesan cheese, if desired.
SERVING SUGGESTIONS:
Enjoy with a nice glass of chilled white wine and a few slices of crunchy French bread.
