FOR THE SALAD:
- 8oz. Barilla® Rotini Pasta
- 1 can (5oz.) Tuna in Water, drained
- 2 cups Arugula, roughly chopped
- 1 cup Cherry Tomatoes, halved
- 1 can (15oz.) Red Beans, rinsed and drained
- 1/4 cup Red Onion, finely diced
- 3 Tablespoons Extra-Virgin Olive Oil
- Fresh Parsley, chopped (for garnish)
FOR THE DRESSING:
- 3 Tablespoons Extra-Virgin Olive Oil
- 2 Tablespoons Lemon Juice
- 1 teaspoon Dijon Mustard
- Salt and Pepper, to taste
Step 1
Cook the rotini pasta according to package instructions until al dente. Drain and set aside.

In a large mixing bowl, combine the drained tuna, arugula, cherry tomatoes, red beans, and red onion.

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
