INGREDIENTS:
- 1 large Ripe pineapple, peeled, cored, and cut into chunks (about 4 cups)
- 3/4 cup Granulated Sugar, divided
- 1 cup Heavy Cream
- 1 cup Whole Milk
- 3/4 cups Granulated Sugar
- 1/4 cup Fresh Lemon Juice
- 1 teaspoon Pure Vanilla Extract
- Pinch of Salt
DIRECTIONS
Step 1
Prepare the pineapple chunks by cutting fresh pineapple into roughly 1-inch pieces for easier blending.
Step 2
Place the pineapple chunks in a blender or food processor. Pulse initially to break down the pieces, then blend continuously until the mixture is smooth and no chunks remain. If necessary, stop and scrape down the sides to ensure even pureeing.
Step 3
In a medium mixing bowl, combine the granulated sugar, pinch of salt, whole milk, and fresh lemon juice.
Step 4
Whisk the mixture steadily for 2-3 minutes or until the sugar is fully dissolved. You can test this by rubbing a small amount between your fingers – if it’s not gritty, it’s ready.
Step 5
Stir in the heavy cream and pure vanilla extract, mixing gently but thoroughly to combine.
Step 6
Add the pureed pineapple to the cream mixture, stirring until fully incorporated and smooth.
Step 7
Cover the mixture with plastic wrap or a tight lid and refrigerate for at least 2 hours. For best texture and flavor, chilling overnight is recommended which allows flavors to meld and the base to thicken.
Step 8
Once well chilled, pour the mixture into your ice cream maker, making sure to follow the manufactuer’s instructions for your specific model.
Step 9
Churn for about 20-25 minutes until the ice cream reaches a soft-serve consistency. Avoid over-churning which can result in ice crystals or excessive firmness.
Step 10
Transfer the churned ice cream into a lidded airtight container and smooth the top with a spatula. Seal tightly to prevent ice formation.
Step 11
Freeze for an additional 3-4 hours (preferably overnight) until the ice cream is firm enough to scoop.
Step 12
Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften slightly for the best creamy texture..
Step 13
Scoop into bowls or cones, and enjoy!
NO ICE CREAM MAKER:
Pour the chilled pineapple cream mixture into a shallow, freezer-safe container. Freeze for 45 minutes, then remove and stir vigorously with a fork or whisk to break up ice crystals. Repeat this stirring process every 30 minutes for 2-3 hours until the ice cream is smooth and firm. Then let sit briefly (about 5-10 minutes) at room temperature before serving.
