INGREDIENTS:

  • 2 New York Strip Steaks (1 inch thick, about 12 oz. each)
  • 1 lb. baby Yukon gold potatoes, halved
  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Rosemary
  • Salt & Freshly Ground Black Pepper, to taste
  • 2 Tablespoons Unsalted Butter
  • 2 Cloves Garlic, minced
  • Fresh Parsley, chopped (for garnish)

Step 1

Preheat your oven to 400ºF (200ºC),

In a large bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper. Ensure each potato is coated in the flavorful mixture.

Step 3

Spread the potatoes in a single layer on a baking sheet. Roast 25-30 minutes, or until golden brown and crispy, flipping halfway through for even browning.

Step 4

Pat the New York Strip Steaks dry with paper towels. This is crucial for achieving a beautiful sear! Season generously with salt and freshly ground black pepper.

Heat olive oil in a heavy-bottomed skillet (cast iron is ideal) over high heat until it shimmers and nearly smokes.

Carefully place the steaks in the hot skillet. Sear for 3-4 minutes per side for medium-rare, or longer for your desired level of doneness. Use a meat thermometer to ensure accuracy! (Medium-rare: 130-135ºF)

In the last minute of cooking , add the butter, minced garlic, and rosemary sprig to the pan. Tilt the pan and spoon the melted butter over the steaks repeatedly for added flavor and richness.

Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful steak.

Step 9

Slice the New York Strip Steaks against the grain. Arrange the sliced steak and roasted potatoes on plates. Sprinkle with fresh parsley or a squeeze of lemon juice for added freshness. Serve immediately.
