About this Recipe

Crispy and delicious, these Mini Strawberry Strudel Bites are simple to make and great for breakfast or as a dessert. Made with a delicious strawberry cream cheese filling and baked to golden brown.

INGREDIENTS:

  • 1 sheet Puff Pastry, thawed
  • 1 cup Fresh Strawberries, diced
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Cornstarch
  • 1/2 teaspoon Vanilla Extract
  • 1 large Egg, beaten
  • Turbinado Sugar, for topping

Step 1

Preheat oven to 375ºF (190ºC) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix together the diced strawberries, sugar, cornstarch, and vanilla extract. Set aside.

Step 3

Roll out the puff pastry sheet on a lightly floured surface into a rectangle.

Step 4

Cut the puff pastry sheet into small squares or rectangles, about 2 inches in size.

Step 5

Place a spoonful of the strawberry mixture in the center of each puff pastry square.

Step 6

Fold the puff pastry over the filling to form a small square of rectangle shape and press the edges to seal. With a small paring knife, light cut the top of the pasties in small diamond cut-outs (or any other shape you would like) for presentation purposes.

Step 7

Place the filled puff pastry bites on the prepared baking sheet.

Step 8

Brush the tops of the puff pastry bites with the beaten egg , than sprinkle with Turbinado Sugar for a golden, sparkling finish.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and crispy.

Step 10

Remove from the oven and let cool slightly before serving.  Enjoy!

OTHER TOPPING SUGGESTIONS:

Sprinkle pastry bites with a light layer of powdered sugar, or a drizzle of icing.

FOR ICING:

• 2/3 cup Powdered Sugar
• 2-3 tablespoon Heavy Cream
• 1/2 tablespoons Vanilla

Mix together until desired consistency is reached. Drizzle over strudels and enjoy!
