INGREDIENTS:
- 1 pound Ground Italian sausage (mild or hot)
- 4 cups Yukon Gold Potatoes, peeled and diced
- 2 cups Kale, finely chopped
- 1 onion, diced
- 3 cloves Garlic, minced
- 4 cups Low Sodium Chicken Broth
- 1 cup Whole Milk
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Red Chili Flakes
- Salt and Pepper, to taste
Step 1
Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for about 10 minutes or until translucent and fragrant.
Step 2
In the same pot, add ground Italian sausage and cook until browned. Drain any excess grease.
Step 3
Add the chicken broth, a little at a time. Then add the potatoes, dried thyme, red chili flakes, salt, and pepper to the pot. Stir well to combine and cook for 15-20 minutes or until potatoes are tender.
Step 4
Stir in chopped kale and let it wilt for a few minutes. Then, pour in the whole milk and stir to combine. Simmer for an additional 5 minutes to meld the flavors.
