About this Recipe

Start your day with something delicious like this homemade Hearty Bliss Breakfast Bowl, made with farm fresh eggs, roasted potatoes and crispy bacon, creating a perfect balance of flavors and textures.

INGREDIENTS:

  • 4 large Fresh Eggs
  • 2 large Russet Potatoes, cleaned and diced
  • 6 slices Bacon
  • 1 small Yellow Onion, chopped
  • 1/2 cup Shredded Cheese (cheddar or your choice)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 2 Tablespoons Extra-Virgin Olive Oil
  • Salt and Pepper, to taste
  • 1/4 cup Green Onion, finely chopped 
  • Hot Sauce, for serving (optional)

Step 1

In a large skillet over medium heat, add teh chopped bacon. Cook until crispy, about 5-7 minutes. Once done, remove the bacon from the skillet and place it on a paper towel to drain excess fat, leaving a little bacon grease in the skillet for flavor.

Step 2

In the same skillet (with the bacon grease), add the diced russet potatoes. Season with garlic powder, paprika, salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden brown and tender. If needed, add a little olive oil for cooking.

Step 3

While the potatoes are cooking, crack the eggs into a bowl, whisk them together with a pinch of salt and papper. In a separate non-stick pan, scramble the eggs over medium heat until they are cooked to your liking.

Step 4

Once the potatoes are cooked, remove them from the heat. In four serving bowls, layer the crispy bacon on top of the potatoes, followed by the scrambled eggs. Sprinkle the shredded cheese over the eggs, allowing it to melt slightly from the heat.

Step 5

Top with chopped green onions, if using, and add a dash of hot sauce for an extra kick, if desired. Enjoy your homemade egg and potato breakfast bowl while warm!

TIPS

Feel free to customize this breakfast bowl by adding your favorite vegetables, such as bell peppers or spinach, to the potatoes for added nutrition.  For a healthier option, consider using turkey bacon instead of regular bacon. 

NOTE

Store any leftovers in an airtight container in the refrigerator for up 3 days.  Dish can also be frozen up to a month.
