It blends the rich smoothness of ripe avocados with the hearty, earthy taste of chickpeas – finished with bright lemon juice, a hint of garlic, and a touch of tahini.

INGREDIENTS:
- 2 ripe Organic Avocados
- 1 can (15oz.) Organic Chickpeas, drained and rinsed
- 1/4 cup Organic Tahini (sesame seed paste)
- 1/4 cup Fresh Organic Lemon Juice (approximately 2 lemons)
- 2 cloves Organic Garlic, minced
- 1/2 teaspoon Ground Cumin
- 1/4 teaspoon Organic Sea Salt
- 2 Tablespoons Organic Extra Virgin Olive Oil, plus more for drizzling
- 2-3 Tablespoons Water, as needed
- Paprika and Chopped Fresh Parsley, for garnish
- Pita Bread, Fresh Cut Veggies or Crackers, for serving
Step 1
Cut avocados in half, remove pit, and scoop the flesh into a food processor.
Step 2
Add the chickpeas, tahini, lemon juice, garlic, cumin, and sea salt to the processor.
Step 3
Blend until smooth, slowly adding olive oil and water as needed to achieve a creamy consistency.
Step 4
Taste and adjust seasoning, adding more salt or lemon juice, if desired.
Step 5
Transfer to a serving bowl, drizzle with olive oil, and garnish with paprika and parsley.
Step 6
Serve with organic vegetable sticks, pita bread, or crackers.
STORING TIPS
Store in an airtight container in the fridge for up to 3 days. Because of the avocado, some slight browning may occur – press plastic wrap directly onto the surface to reduce oxidation.
